Abstract

Producto fermentado que comprende, en un permeado de suero lácteo, al menos entre 4.75 x 108 y 2.14 x 109 UFC/ml de bacteria lácticas y entre 8.50 x 105 y 1.55 x 107 UFC/ml de levaduras, todas ellas provenientes de gránulos de kefir. El producto puede tener un pH entre 5 y 4 y puede encontrarse en la forma de un líquido liofilizado o en polvo seco. El producto es obtenido mediante la fermentacion de permeado de suero lácteo con gránulos de kefir y/o cultivo madre de gránulos de kefir.
