Abstract

酵母を酵母貯留槽に貯留する貯留工程と、該貯留された酵母を麦汁に添加して発酵させて発酵麦芽飲料を得る工程と、前記貯留された酵母を前記発酵工程に供給する工程と、前記発酵工程で沈降した酵母を前記貯留工程に回収する工程と、からなる発酵麦芽飲料製造方法において、前記酵母貯留工程で酵母含有液を凍結点以上の低温に保つとともに、酵母貯留槽に酵母が生物活性を失わず且つ増殖しない量だけ酸素含有気体を投入し、前記酵母供給工程で前記発酵工程へ発酵発現量の40~80%の酵母を供給し、前記発酵工程で酵母が発酵発現量まで増殖する量の酸素含有気体を発酵槽へ投入して、酵母の増殖とともにアルコール発酵させ、前記発酵槽下部に内部が殺菌された酵母回収槽を接続して、該酵母回収槽に沈降した酵母を前記酵母貯留槽に移送する。
