Abstract

L'invention porte sur un procédé de fabrication d'un acide L-aminé qui comprend la culture d'une bactérie appartenant à la famille Enterobacteriaceae qui permet de produire l'acide L-aminé dans un milieu de culture, de produire et d'accumuler l'acide L-aminé dans le milieu de culture puis de récolter l'acide L-aminé dans le milieu de culture. Selon ce procédé, une graisse qui a été traitée par une enzyme catalysant une réaction d'hydrolyse de la graisse ou une réaction d'échange d'ester entre la graisse et un alcool, est employée comme source de carbone dans le milieu tel que décrit ci-dessus.
