Abstract

　本発明は、ビフェニルアラニンエステル化合物（１）を、有機溶媒と水の混合溶媒中、ｐＨ６～１３の範囲で、Ｂａｃｉｌｌｕｓ属に属する微生物由来のプロテアーゼを用いて加水分解し、生成したＬ－ビフェニルアラニン化合物の塩（２'）を含む水層と、未反応のＤ－ビフェニルアラニンエステル化合物（３）を含む有機層を分離し、当該水層に無機塩および有機溶媒を加えて、当該水層中のＬ－ビフェニルアラニン化合物の塩（２'）を抽出する、Ｌ－ビフェニルアラニン化合物の塩（２'）の回収方法に関する。
