Abstract

L'invention est destinée au réchauffement et au refroidissement de produits alimentaires lors de leur fabrication et notamment lors du séchage et de la mise en conserve de fruits et légumes, la fabrication de pâtes de tomates et peut s'utiliser dans les chaînes technologiques des industries alimentaire et de transformation. Le procédé de traitement thermique de produits alimentaires comprend le réchauffement de l'eau dans un circuit de circulation avec un niveau différent de la température de l'eau et le refroidissement. Selon l'invention, le réchauffement de l'eau s'effectue dans trois circuits de circulation, l'énergie thermique est produite pendant le refroidissement du produit alimentaire dans l'installation de refroidissement qui pompe l'énergie thermique d'un circuit à l'autre, et 25 % à 35 % de l'énergie thermique sont utilisés pour chauffer l'eau dans les circuits de circulation, avec une capacité de chaleur de l'eau dans les circuits de circulation comprise entre 120 et 295 kJoules / kg et une température de l'eau de 25 à 80 °C, avec un rapport de températures de l'eau dans chaque circuit à l'entrée égal à 1: (2 - 2,5): (3 - 3,5).
