Abstract

L'invention a trait à un procédé de mise en dispersion de fruits charnus, qui consiste : à charger la matière première dans un appareil à circulation interne cylindrique et vertical, qui est relié à une pompe par l'intermédiaire d'une tubulure d'aspiration placée sur sa partie de fond et d'une tubulure de refoulement dotée d'un moyen de cavitation et placée sur sa partie supérieure ; à remplir la tubulure d'aspiration et la cavité de la pompe avec un milieu liquide ; et à mettre en suspension la matière première, en la pompant dans un circuit de recirculation tout en la mettant en cavitation et en la chauffant avant de l'introduire dans l'appareil, et en imprimant un mouvement hélicoïdal au flux contenu dans l'appareil ; à dégazéifier et à extraire le produit, pour que ce dernier soit conditionné et fermé hermétiquement. Afin de réduire les risques de destruction par oxydation thermique des substances nutritives, on imprime un mouvement hélicoïdal à la suspension contenue dans l'appareil et on l'introduit dans le circuit de recirculation par l'intermédiaire d'un orifice central ménagé dans le fond de l'appareil. La dégazéification est lancée avant que n'apparaisse un vortex axisymétrique dans la masse de la suspension en mouvement hélicoïdal, et, une fois que la suspension a été chauffée à une température donnée, la recirculation est interrompue, et le produit est déchargé. L'invention concerne également un dispositif permettant de mettre en oeuvre ledit procédé, qui comprend un appareil à circulation, dont la section transversale décroît du haut vers le bas, et un orifice traversant la partie de fond, qui relie l'appareil à circulation à la tubulure d'aspiration de la pompe.
