Abstract

La présente invention concerne un procédé et un dispositif pour déterminer la brillance de riz, notamment de riz blanc, permettant une évaluation objective de la brillance ou de l'état de lissage de la surface de grains de riz. A cet effet, une contrainte de cisaillement est appliquée à une certaine quantité de riz, et les intervalles de temps (T3) d'effets d'adhérence-glissement sont déterminés, lesdits intervalles de temps étant représentatifs du degré de polissage ou de la brillance.
