Abstract

La présente invention concerne un processus de production d'un nouvel amidon présentant différentes propriétés de l'amidon au moyen d'un système enzymatique obtenu par modification génétique d'un amidon végétal synthétisant le système enzymatique; un procédé dans lequel un gène codant une enzyme ramifiante d'un organisme produisant de l'amidon est transféré dans un variant dépourvu de cette enzyme de manière à surexprimer l'enzyme comparativement au type sauvage d'origine; un procédé de construction d'un variant présentant une dose d'expression différente de l'enzyme par rapport au type sauvage d'origine; le variant ainsi obtenu présentant une dose d'expression différente de l'enzyme ramifiante par rapport au type sauvage d'origine; et un procédé qui permet de produire de l'amidon tout en contrôlant l'expression de l'isoamylase pendant la production d'amidon comme dans le riz, qui consiste à transférer dans une plante, un gène comprenant un promoteur d'isoamylase et un promoteur situé en amont du gène d'isoamylase.
