Abstract

L'invention concerne un procédé permettant de vieillir rapidement des boissons alcooliques et des boissons obtenues au moyen de ce procédé. Au cours de ce procédé, un produit de départ alcoolique consommable est mis en contact avec de l'énergie ultrasonore à une puissance d'au moins environ 3 Watts/litre. On peut également, si l'on souhaite, mettre en contact une palette d'agents aromatisants avec l'alcool et l'énergie ultrasonore, en vue d'aromatiser la boisson. L'énergie peut pousser la chimie de maturation de l'alcool, de manière à obtenir un résultat rapide et un produit consommable à caractérisation unique et doté d'un arôme et d'une douceur dépassant ceux-ci d'alcools consommables vieillis selon des procédés plus lents et traditionnels.
