L'invention concerne un procédé et un dispositif pour congeler une denrée alimentaire à consistance liquide, cette dernière étant congelée sur la surface d'un cylindre réfrigéré (1). La couche congelée de la denrée alimentaire est raclée pour être éliminée de la surface du cylindre par une unité de séparation (5). Les morceaux retirés par raclage sont acheminés, dans un contenant ou par l'intermédiaire d'un dispositif de transport, à une station de traitement ultérieur ou d'emballage.
