Abstract

L'invention concerne un système thermique pour eau/lait destiné à être utilisé dans des bacs de coagulation pour le lait (ou cuves à formage). Cette invention permet notamment de choisir un système d'échange thermique en fonction des circuits appliqués sur un bac constitué d'un fond et d'une bande fabriqués dans une feuille d'acier inoxydable. Ce système comporte un circuit primaire (8) d'utilisation de vapeur ou de refroidissement d'eau direct, ainsi qu'un circuit secondaire fermé (7), qui utilise une quantité limitée d'eau propre de chauffe ou de refroidissement.
