- Milk-water exchange involves the whole internal surface of the cheese-vat in contact with the product, made by the band (5) and by the bottom (6) . These two details , band and bottom, are made of stainless steel trapcoled sheet .
- Band and bottom are equipped with indipendent entry and exit connections and are parallel connected , in entry and exit, with the secondary circuit.

Abstract
L'invention concerne un système thermique pour eau/lait destiné à être utilisé dans des bacs de coagulation pour le lait (ou cuves à formage). Cette invention permet notamment de choisir un système d'échange thermique en fonction des circuits appliqués sur un bac constitué d'un fond et d'une bande fabriqués dans une feuille d'acier inoxydable. Ce système comporte un circuit primaire (8) d'utilisation de vapeur ou de refroidissement d'eau direct, ainsi qu'un circuit secondaire fermé (7), qui utilise une quantité limitée d'eau propre de chauffe ou de refroidissement.
