Abstract

La présente invention se rapporte à une nouvelle L-sorbosone déhydrogénase indépendante de certaines coenzymes, qui provient d'un micro-organisme appartenant au gène Gluconobacter oxydans et qui agit sur la L-sorbosone pour produire de l'acide 2-céto-L-gulonique. Cette enzyme présente les propriétés physico-chimiques suivantes: a) pH optimum: environ 7,0; b) température optimum: environ 30°C à environ 40°C; c) structure moléculaire: composée d'un type d'unité ayant un poids moléculaire d'environ 47,500U5,000, mesuré par électrophorèse sur gel à base de polyacrylamide de sulphate de sodium dodécyle; d) thermostabilité: stable au-dessous de 30°C; et e) inhibition: par des ions Cu2+.
