- emulsifiers are well known and the skilled artisan will have no difficulty in selecting particular materials for use herein as an emulsifier. Abstract
L'invention concerne des produits alimentaires, en particulier des émulsions de boissons stables qui contiennent une huile de poisson non hydrogénée, cette huile de poisson ayant néanmoins une meilleure stabilité en ce qui concerne la dégradation du goût et de l'arome. Les produits alimentaires améliorés sont stabilisés par incorporation de petites quantités de fructose dans le produit alimentaire de sorte que le rapport pondéral entre le fructose et l'huile de poisson soit au moins d'envrion 0,01:1. D'une manière surprenante, l'incorporation de quantités modestes de fructose dans des produits alimentaires dans les proportions minimales indiquées ci-dessus donnent un effet stabilisateur à l'huile de poisson qui est très instable. La présente invention s'applique en particulier à des huiles de poisson riches en acides gras oméga-3.
