TO ALL WHOM IT MAY CONCERN:
Be it known that I, S. P. DYER, of Prairie Depot, in the county of Wood, and State of-Ohio, have invented a new and useful Improvement in Evaporating-Pan; and I do hereby declare that the following is a full, clear, and exact description thereof, which will enable others skilled-in the art to make and use the same, reference being had to the accompanying drawings, forming partof this specification, in. which- Figure 1 is a vertical longitudinal section of my improved evaporating-pan, taken through the line z z, fig. 3.
Figure 2 is a vertical cross-section of the same, taken through the line :r w, fig. 1.

My invention has for its object to furnish an improved evaporating-pan for making sirup or sugar from cane juice, sorghum juice, &c., and for making cider-jelly, so constructed and arranged that; the various operations of evaporating, skimming, and'finish'ing maybe conveniently carried on at the same time; and it consists in the combination and arrangement of the shimmers with the receiving-pan in the combination and arrangement of the strainer-gates and operating levers with the partitions of the pan in the combination of a stationary strainer with the finishing-pan, and in the arrangement of the flue-dampers and partitions.
A. is the receiving-pan, into which the raw juice is first put, and which is placed directly over the fire in the fire-chamber B. G are the skimmer-s, the upper ends of which are, pivoted to the upper edges of the side plates D. The lower parts ofthe side plates D areso formed as to form spouts to receive the scum from the skimmer-s C, and conduct it out of the way, and they are securely attached to the ends of the receiving-pan A, as shown in fig. 3. The partition E, between the receiving-pan A and the next compartment F, contains a strainer, G, through which the juice passes to the said compartment F. The flow of the juice through the strainer G is regulated or entirely prevented by the gate H working up and down in grooves formed in the partition E, and operated by the lover I, pivoted to said partition as shown in figs. 1 and 3. The skimmers G are operated by handles J passing out through holes in the side plates D, as shown in fig. 3. The partitions UV W, which form the compartments F O P, are all provided with gates R S T, operated by levers L M N, pivoted to arms attached to the said partitions, so that the flow of the sirup from one compartment to another may be regulated at pleasure. X is the finishing-pan, which is set at a lower level than the others, as shown in fig. 1. From the compartment P the sirup flows upon the strainer A, securely attached to the sides of the pans, through which it passes, to the finishing-pan X, from which it is drawn oil when completed, through the pipe B. The part of the furnace in the rear of the fire-chamber B is divided into upper and lower lines 0 and D, by the partitions E and F, a short space being left between the rear end of the partition E and the front end of the partition F, as shown in fig. 1. G, H, and I are the dampers,-by means of which the access of the heat to thebottom of the pan is regulated. By lowering the dampers G and I, and raising the damper H, the heat all passes into the chimney through the lower flueC" without coming into contact with the central and rear parts of the pan. By raising the damper G and lowering the dampers H and I, the heat all passes into the chimney. through the upper flue D, being in contact with the bottom of the pan throughout its whole extent. By lowering the damper H, and raising the dampers G and I, the heat passes through the forward part of the flue D, then down into the rear part of the flue U, and so on to the chimney, ominginto contact with the bottom of the whole pan, except the finishing pan X. The forward part of the furnace rests upon cam-legs J, having teeth formed upon their lower ends and sides, so that the elevation of said forward part may be regulated at pleasure.
Having thus described my invention, what I claim as new, and desire to secure by Letters Patent, is-'- 1. The skimmers C, constructed, arranged, and operatel substantially as herein shown and described, and for the purpose set forth.
2. The combination and arrangement of the strainer Gr, gates H R S T, and operating levers L M N, with the partitions G U V M of the pan, substantially as herein shown and described, and for the purposeset forth.
3. The combination of the stationary strainer A with the finishing-pan X, substantially as herein shown and described, and for the purpose set forth. i V
4. The arrangement of the dampers H I, and flue-partitions E F, with each other, substantially as herein shown and described and for the purpose set forth. v
