The knife is composed of a handle a to which a blade holder in the form of two superposed, bladeshaped metal strips 0 are secured. A thin steel blade I) is adapted to be inserted between the strips 0 and to be clamped in position, for instance by means of screws d. The arrangement is such that the cutting edge, together with a narrow uniform margin, of the blade 7) projects beyond the edges of the strips 0, and said latter edges are thickened so as to form shoulders whereby the depth of the out is limited.

By limiting the depth of the cut in this manner, a damage to the hide is effectively prevented.
I claim 1. A flaying-knife comprising a handle,
a blade holder composed of two superposed metal strips secured to said handle, a loose blade adapted to be held between said strips with the cutting edge projecting uniformly from the edges of the strips, and means for clamping the strips to the blade, the edges of the strips being thickened so as to form shoulders along the cutting edge of the blade for limiting the depth of the cut.
2. A flaying-knife comprising a handle,
a blade holder composed of two superposed, blade-shaped metal strips secured to said handle and connected along one edge, a loose blade adapted to be held between said strips with the cutting edge projecting uniformly from the free edges thereof, and means for clamping the strips to the blade, said free edges of the strips being thickened so as to form shoulders for limiting the depth of the out.
