A method for making a dry buttermilk milk-protein concentrate which includes dissolving a protein curd with a moisture content of 70...75 % up to dry matter content of 15...18 % in water, heating the solution up to a temperature of 50...60 °C and keeping in the course of 25...30 minutes at constant mixing, heating the solution up to a temperature of 70...75 °C prior to delivery for drying. To prepare a protein curd, buttermilk and acid cheese whey are used. They are pasteurized separately at a temperature of 93...95 °C and 90...93 °C in the course of 10...15 minutes and 25...30 minutes correspondingly, cooled up 80...85 °C. The buttermilk is supplemented with acid cheese whey in an amount of 30...40 % to the buttermilk weight. The mixture is mixed, kept in the course of 10...15 minutes, cooled up to 40...45 °C, the protein curd is washed singly at a water temperature of 50...60 °C, the protein complex is dissolved in water with food additive "Biofos 90" in an amount of 0.8...1.0 % for obtaining a protein solution with pH of 6.5...6.8. Drying of the solution of the buttermilk milk-protein concentrate is carried out in a fluidized layer at an air temperature of 80±5 °C in a drying chamber.
