Abstract

A method for making a basic red sauce provides for preparation of brown broth, frying chopped carrot, parsley root, onion, tomato paste and animal fat, addition thereof into the brown broth together with a structure-forming agent, addition of spices, straining and boiling. The bioactive additive "Enteros" in an amount of 7-10 wt. % are used as a structure-forming agent. After boiling 1.5-3.0 wt. % of lecithin are added, and the mixture obtained in such a manner is added to the main part of the sauce.
