Abstract

A process for producing a fruit dessert pink wine consists in preparation of fermented-alcoholized fruit juices, blending and alcoholization. Blending is carried out by means of mixing a fermented-alcoholized apple juice, fermented-alcoholized and/or alcoholized juice of black chokeberry and fermented-alcoholized and/or alcoholized juice of European black currant. At that the content of fermented-alcoholized and/or alcoholized juice of black chokeberry shall be no more than 1.5 % of blend volume and the content of fermented-alcoholized and/or alcoholized juice of European black currant shall be 3-5 % of blend volume. Upon blending the alcoholized apple juice is added to the blend. At that the content of alcoholized apple juice shall not be more than 25 % of blend volume. After blending the wine is sugared and alcoholized/ After that the wine is directed to rest. The wine is held at rest for at least 10 days. After blending citric acid is added to the blend.
