Abstract
Спосіб виробництва печива з борошном гарбузовим включає приготування тіста за рецептурою: борошно - 100 г, масло - 55 г, цукрова пудра - 50 г, яйця, тобто меланж - 20 г, ванільний екстракт - 0,38 см3 або ванілін - 0,125 г, або ванільний цукор - 2,5 г, розпушувач - 2 г, сіль - 1 г, де для приготування тіста збивають цукрову пудру з м'яким маслом, потім додають меланж, ароматизатор, сіль, розпушувач. На наступному етапі додають борошно гарбузове кількістю 5 % від маси тіста, знову збивають 1-2 хв, після цього додають борошно пшеничне, потім випікають, для чого готове тісто закладають у кондитерський шприц-прес із насадкою та висаджують на сухий кондитерський лист на відстані 2-3 см один від одного, випікають за температури 220-230 ºС до світло-коричневого кольору.The method of making cookies with pumpkin flour includes preparing the dough according to the recipe: flour - 100 g, butter - 55 g, powdered sugar - 50 g, eggs, i.e. melange - 20 g, vanilla extract - 0.38 cm3 or vanillin - 0.125 g, or vanilla sugar - 2.5 g, baking powder - 2 g, salt - 1 g, where powdered sugar is beaten with soft butter to prepare the dough, then melange, flavoring, salt, baking powder are added.
