Abstract
Спосіб виробництва кексів з соломкою гарбузовою свіжою включає спочатку приготування тіста, яке містить борошно - 70 г, цукор - 50 г, маргарин (вміст жиру 72 %) – 50 г, яйця – 50 г, сіль - 0,2 г, розпушувач (сода харчова + фосфат натрію) - 2,5 г, цукор ванільний - 0,3 г, при якому до маргарину кімнатної температури добавляють сіль і цукор ванільний, потім його збивають 5-7 хв у тістомісильній машині з обертами 60-65 за 1 хв. Після цього добавляють цукор і збивають ще 5-7 хв, потім добавляють яйця і збивають 10 хв. Після цього добавляють борошно пшеничне вищого сорту і перемішують у міксері 3-5 хв. Соломку гарбузову свіжу кількістю 25 % від маси тіста добавляють у приготовлене тісто, перемішують, виливають у форми і випікають за температури 180-185 ºС.The method of production of cupcakes with fresh pumpkin straws includes first preparing the dough, which contains flour - 70 g, sugar - 50 g, margarine (fat content 72%) - 50 g, eggs - 50 g, salt - 0.2 g, baking powder (soda food + sodium phosphate) - 2.5 g, vanilla sugar - 0.3 g, in which salt and vanilla sugar are added to margarine at room temperature, then it is whipped for 5-7 minutes in a dough mixer with 60-65 revolutions per 1 minute. Fresh pumpkin straw in the amount of 25% of the mass of the dough is added to the prepared dough, mixed, poured into molds and baked at a temperature of 180-185 ºС.
