Abstract

Cпосіб виготовлення пресованих форм для приготування кавових продуктів, в якому як вихідну сировину беруть зерна смаженої або знезараженої зеленої кави, що являє собою безперервний технологічний процес. Спосіб включає наступні стадії: a) термообробка сировини в кавовому ростері при температурі від 170 до 240 °C; b) охолодження обсмаженої сировини до температури від 24 до 36 °C; c) розмелювання сировини в кавовому млині одразу після охолодження, виключаючи стадію дегазації, з отриманням порошку меленої кави з розміром частинок від 100 до 550 мкм; d) сепарація порошку меленої кави в спеціальному пристрої; e) агломерація дрібної фракції порошку меленої кави в спеціальному пристрої; f) змішування порошку меленої кави з додатковими інгредієнтами; g) пресування порошку меленої кави; h) підсушування пресованої форми в тунельному транспортері шляхом інфрачервоного опромінення; і) пакування пресованих форм у герметичну упаковку, що повторює форму брикету або таблетки.The method of manufacturing pressed forms for the preparation of coffee products, in which roasted or disinfected green coffee beans are taken as the raw material, which is a continuous technological process. The method includes the following stages: a) heat treatment of raw materials in a coffee roaster at a temperature from 170 to 240 °C; b) cooling the roasted raw material to a temperature of 24 to 36 °C; c) grinding of raw materials in a coffee mill immediately after cooling, excluding the degassing stage, to obtain ground coffee powder with a particle size of 100 to 550 microns; d) separation of ground coffee powder in a special device; e) agglomeration of the fine fraction of ground coffee powder in a special device; f) mixing ground coffee powder with additional ingredients; g) pressing of ground coffee powder; h) drying of the pressed form in the tunnel conveyor by means of infrared radiation; i) packaging of pressed forms in hermetic packaging, which repeats the shape of a briquette or tablet.
