Abstract
Description
The invention relates to the food industry, in particular to methods for the production of powders from plant materials for use as a food additive for the production of functional products.
27.02.2005).Closest to the proposed invention is a method for the production of powder from plant materials, which involves drying and grinding plant materials to obtain particles of a given dispersion by crushing on a grinder, followed by introduction into the drying chamber (RF Patent 2236839, A 23, publ. 02.27.2005).
The disadvantage of this method is that it provides for the presence of expensive equipment that is not commercially available in the Russian Federation and does not find wide application.
The technical problem to which the invention is directed is to create a food powder from malt sprouts and polishing waste generated during the germination of barley grain on malt.
Malt sprouts and polishing waste are obtained by germinating barley on malt. Malt sprouts are separated by sprouts. The yield of sprouts is 4% of the total barley grain. After drying, the malt is polished, with the formation of polishing waste in an amount of from 0.8-1.5% of the total grain of barley.
The technical problem is achieved by the fact that in the proposed method for producing powder from plant materials, including drying and grinding particles of a given dispersion, followed by introducing them into the drying chamber, unlike the prototype, malt sprouts and polishing waste generated during germination of grain are used as plant materials barley for malt, which is immediately fed into the drying unit and kept for 20-60 minutes at a temperature of 90 ° C and a specific load on the conveyor belt of 2.85-5.7 kg / m 2 until it is reached mass fraction of moisture is 12-15%, then the product is ground to a particle size of 150-170 microns, sieved, mixed ground malt sprouts and polishing waste in a ratio of 70:30. The size of the grinding is determined by the remainder of the mass fraction of the product coming off the sieves from wire mesh N45 and N067, sieves from silk fabric N38 and N27, sieves from nylon fabric N43 and N29. The remainder of the product should not exceed 2%. Sifting allows you to save the product from the remains, not subjected to grinding, and to obtain finely ground food powder of loose consistency. Packing of the finished powder is carried out in moisture-proof bags weighing up to 5 kg, with hermetic sealing.
The technical result consists in the fact that in the process of the complex use of such secondary raw materials formed during the germination of barley for malt, a 100% waste-free and resource-saving technology for processing barley grain is achieved, and the method of producing powder from secondary products of barley processing ensures high preservation of vitamins, minerals elements, dietary fiber, amino acids and fatty acids of the finished powder.
The method of obtaining powder from recycled materials from the production of barley malt is as follows.
Malt sprouts and polishing waste, after separation from barley grain during malting, are immediately fed to the drying unit and kept for 20-60 minutes at a temperature of 90 ° C and a specific load on the conveyor belt of 2.85-5.7 kg / m 2 until the mass fraction of moisture is 12-15%, then the product is ground to a particle size of 150-170 microns, sieved, mixed ground malt sprouts and polishing waste in a ratio of 70:30.
