Abstract

A method for edible protein preparation of green mass of plants provides for treatment of green mass with 5% aqueous solution of metabisulphite, shredding and juice extraction, removal of protein chloroplast fraction from juice with obtaining of brown juice, isoelectric precipitation of protein from brown juice at pH of 4.0-5.0 and treatment of precipitate with acidified water for removal of nonedible components and drying of the product prepared. In order to improve protein quality the protein precipitate treatment is carried out prior to drying two times for 10-30 min. with acidified and heated to 40-55°C water at ratio of precipitate:water as 1:10-1:100, at first at pH=4.0-5.0 and then at pH=2.8-3.2.
