Abstract

Спосіб одержання желейного продукту включає приготування водного розчину високометоксильованого пектину, внесення у водний розчин високометоксильованого пектину цукру та кальцію, охолодження, підготовку комплексу пектолітичних ферментів з пектинметилестеразною активністю рослинного походження, змішування водного розчину високометоксильованого пектину з комплексом пектолітичних ферментів з пектинметилестеразною активністю рослинного походження, проведення процесу ферментативного гідролізу та застигання розчину. До підготовленого водного розчину високометоксильованого пектину концентрацією 1-3 % додають цукор масою 29-31 % та кальцій. Суміш нагрівають до 60-70 °С, охолоджують до температури ферментації 45-50 °С. До одержаної таким чином суміші додають підготовлений комплекс пектолітичних ферментів з пектинметилестеразною активністю рослинного походження.
