Технологія соусу "Сіпо"Sipo sauce technology
Спосіб виробництва соусу-майонезу, полягає в тому, що до відокремлених сирих яєчних жовтків додають підготовлену гірчицю, сіль, цукор, каротиновмісну дієтичну добавку "Мультикаренол" і композиційну суміш дієтичних добавок та ретельно перемішують. При безперервному збиванні у суміш вводять тонкою цівкою охолоджену до 16-18 "С соняшникову олію і продовжують збивати до утворення емульсії з однорідною консистенцією. Потім додають оцет і ретельно перемішують.The method of production of mayonnaise sauce consists in the fact that prepared mustard, salt, sugar, carotene-containing dietary supplement "Multicarenol" and a composite mixture of dietary supplements are added to the separated raw egg yolks and thoroughly mixed. With continuous whipping, sunflower oil cooled to 16-18 "C is introduced into the mixture in a thin stream and continued to be whipped until an emulsion with a uniform consistency is formed. Then vinegar is added and mixed thoroughly.
Запропонований спосіб виробництва соусу "Сіпо" дає новий технічний результат: дозволяє отримати продукт з високими споживними властивостями, підвищеним вмістом білка, харчових волокон, мінеральних речовин фізіологічно необхідних вітамінів антиоксидантної групи, каротиноїдів (лікопіну, лютеїну, бета-каротину) (табл. 2). Соціальний ефект від впровадження розробленої продукції полягає у забезпеченні населення України харчовими продуктами підвищеної харчової цінності: вітамінів антиоксидантної групи, каротиноїдів (лікопіну, лютеїну, бета-каротину).The proposed method of production of "Sipo" sauce gives a new technical result: it allows obtaining a product with high consumption properties, an increased content of protein, dietary fiber, minerals, physiologically necessary vitamins of the antioxidant group, carotenoids (lycopene, lutein, beta-carotene) (Table 2) . The social effect of the introduction of the developed products consists in providing the population of Ukraine with food products of increased nutritional value: vitamins of the antioxidant group, carotenoids (lycopene, lutein, beta-carotene).
