Abstract

The method provides for preparation of solution with content of solids of at least 90 %, whereof fructose is amount to more than 90% of solids, supply of fructose-containing aqueous solution into crystallizer, having heat transfer surface and which is furnished with vaned mixer, introducing of false grains into crystallizer, cooling of mass with regulated speed for maintenance of super saturation coefficient of less than 1.25, separation of crystals from massecuite syrup, and theirs drying. The introducing of false grains is realized at the temperature of solution of 50-60°C, and the speed of cooling is regulated in such a way that medium temperature difference between the most warm and most cold parts of the solution do not exceed 6°C, at that the value of specific heat transfer surface of crystallized is no less than 5 m\m.
