Abstract
The present invention relates to a preparation method of fermented products of fruits or vegetables, characterized in that fruits, vegetables or the mixtures thereof are injected and fermented with yeast and lactobacillus in stages. The present invention also relates to the fermented products prepared by said method and the functional composition comprising the products. The fermented products prepared by the method according to the present invention contain plenty of lactobacillus with good acid-resistance and bile acid-resistance, and physiologically active components such as organic acids, enzymes or vitamins which are useful in the human body, then being excellent in the antifungal activity, the digestive activity and the deodorant activity as compared with the fermented products injected with yeast or lactobacillus alone. Therefore, the fermented products according to the present invention are very useful as a ingredient of functional food, diet food, antimicrobial, digestive and feed composition.
