Abstract
Bu buluş, şekerleme üretiminde şeker kütlesinin soğutulmasında kullanılan bir yöntem ile ilgilidir.Buluş konusu yönteme göre şekerleme üretiminde şeker kütlesinin soğutulması için reaktör (1) yatay bir eksen etrafında düşük hızla döndürülmekte, sıcak şeker reaktörün duvarlarına ince bir tabaka halinde yayılarak şeker kalitesi bozulmadan daha kısasürede soğutulmaktadır. Bu yöntemin uygulanması sırasında bir reaktör (1) ve bir döndürme düzeneği (4) kullanılmaktadır. Bu yöntemin kullanılmasıyla,patlayan şeker üretiminde soğutma işleminin maliyeti azaltılmakta ve ayrıca bu işlemle kapasitenin yükselmesi sağlanmaktadır.SUMMARY OF THE INVENTION The present invention relates to a process for cooling the sugar mass in confectionery production. cooled.
