Abstract

Summary of the Invention: A beverage containing fig seed coat and mulberry juice consists of fig seed coat, water, mulberry juice, sweetener, citric acid, and water. This invented product, containing fig seed coat and mulberry juice at a mulberry juice to fig seed coat ratio of 1:1, exhibited a DPPH antioxidant capacity comparable to vitamin C of 183.96 mg ascorbic acid/L. The ORAC score and FRAB antioxidant capacity of the sample were 622.46 and 5,432 mg Trolox/L, respectively. Furthermore, the beverage containing fig seed coat and mulberry juice did not precipitate when stored at room temperature for 6 months without the addition of hydrocolloids or stabilizers.

Claims 1. A beverage containing gac fruit membrane and mulberry juice has the following components: Gac fruit membrane 15.00-30.00% by weight, mulberry juice 5.00-25.00% by weight, sweetener 9.80-20.00% by weight, citric acid 0.20-0.80% by weight, and water 50.00-60.00% by weight. 2. A beverage containing gac fruit seed membrane and mulberry juice, as per claim 1, where the mulberry juice can be either black mulberry juice or red mulberry juice. 3. A beverage containing gac fruit seed membrane and mulberry juice, as per claim 1 or 2, where the best mulberry juice is red mulberry juice. 4. A beverage containing gac fruit membrane and mulberry juice, as per claim 1, where the best sweetener is white granulated sugar. 5. Beverages containing gac fruit seed membrane and mulberry juice, according to any one of claims 1-4, where the appropriate amount of gac fruit seed membrane is 15.00% by weight. 6. A beverage containing gac fruit seed membrane and mulberry juice, as per any one of claims 1-5, where the appropriate amount of mulberry juice is 15.00% by weight. 7. Beverages containing gac fruit seed membrane and mulberry juice, as per any one of claims 1-6, where the appropriate amount of sweetener is 13.35% by weight. 8. A beverage containing fig bran and mulberry juice, as per any one of claims 1-7, where the appropriate citric acid content is 0.40% by weight. 9. A beverage containing gac fruit seed membrane and mulberry juice, as per any one of claims 1-8, where the appropriate water content is 56.25% by weight.
