Description
При сбраживании крахмалопродуктов в спиртовом производстве брожение обычно ведут в нестерильных услови х, ибо вместе с солодом в осахариваемые среды вноситс АШОГО микроорганизмов, которые в процессе осахаривани только частично ослабл ютс и уничтожаютс . Оставшиес микроорганизлш при брожении размножаютс и снижают выход спирта. Сульфитаци заторов должного эффекта не дает. Предлагаемый автором способ заключаетс в том, что сначала затор осахаривают небольшим количеством солода/ например, 0,5-1% от веса крахмалопродукта при температуре 62-63. Смешивание солода с осахариваемой массой производ т непрерывно при энергичном paз eшиоании дл получени необходилюго контакта между ферментами солода и ,массой. По окончании осахаривани , т. е. когда в массе накопитс 80% мальтозы , температуру массы поднимают до 75-85° и при этой температуре выдерживают в цел х стерилизации 20-60 минут. этом в ней инактивируютс ферменты солода, необходимые дл дальнейшего сбраживани декстриноз. Осахаренную стерильную массу смешивают загем с дрожжами и выдерживают в ферментаторе до сбраживани всей мальтозы. Таким образом 80% крахмала сбраживают в стерильных услови х и этим обеспечивают получение высоких выходов спирта. Далее в брод шую массу ввод т, солод в количестве, необходимом дл осахаривани декстринов, после чего массу направл ют на дображивание. Прибавление нестерильного солодового молока дл сбраживани декстринов не может оказать вли ни на снижение выходов спирта, так как, хот с ним и будет введена посторонн микрофлора, однако в бражке после сбра вани мальтозы будет содержатьс 5-6% спирта, который будет преп тствовать развитию этой микрофлоры. Микрофпора солодового молока может быть понижена путем прибавки к нему спирта и выдерживани полученной смеси в течение необхрДИМОГ9 времени.
