Однако и при этих услови х нередки случаи закисани бражки в отдельных ферментерах. Известно, что ацетоно-бутиловые бактерии способны сбраживать крахмал без предварительного разваривани . Разваривание примен етс исключительно с целью стерилизации и ведет не к улучшенню, а к ухудшению среды, так как при этом разрушаютс витамины и другие факторы роста, содержащиес в зерне и благопри тно вли ющие на развитие культуры.
