СПОСОБ ПОЛУЧЕНИЯ ОСВЕТЛЕННОЙ СУХОЙ КРОВИ путем стабилизации крови раствором триполифосфата натри , подогрева смеси, обработки ее перекисью водорода, охлаждени смеси , инактивации перекиси водорода каталазой и последующей сутцки, отличающийс тем, что, с целью сокращени времени получени и повьшени выхода целевого продукта, кровь после охлаждени подвергают ультрафильтрации на полупроницаемых мембранах с диаметром пор 0,040 ,06 мкм при скорост х потока крови 0,7-1,3 м/с и давлении 0,3-0,5 мПа, а инактивацию перекиси водорода осуществл ют на стадии ультрафильтрации при достижении содержани сухих веществ 18-20%. Изобретение относитс к технологии получени осветленной сухой крови и может быть использовано в м сной , пищевой, хлебопекарной и других отрасл х промышленности. Известен способ получени осветленной сухой крови, включающий стаби лизацию крови нагретым раствором три полифосфата натри (50% к об-ьему кро ви), подогрев смеси, обработку ее перекисью водорода, вьщержку (в тече ние 30 мин), охлаждение ее (до 37± 3 С), введение водного раствора ката лазы дл инактива;ции остатков перекиси водорода (в количестве 6,4 г условных на 1 т осветленной крови) и последующую сушку Л. Однако известный способ длителен и обеспечивает недостаточно высокий выход целевого продукта. Целью изобретени вл етс сокращение времени получени и повьшение выхода целевого продукта. Указанна цель достигаетс тем, что согласно способу получени осветленной сухой крови путем стабилизации крови раствором триполифосфата натри , подогрева смеси , обработки ее перекисью водорода , охлаждение смеси, инактивации перекиси водорода каталаэой и посдедующей сушки, кровь после охлаждени подвергают ультрафильтрации на полупроницаемых мембранах с диаметром пор 0,04-0,06 мкм при скорос т х потока крови 0,7-1,3 м/с и давлении 0,3-0,5 мПа, а инактивацию пе рекиси водорода осуществл ют,на ста дии ультрафильтрации при достижении содержани сухих веществ 18-20%. П р и м е р. В стабилизированную кровь крупного рогатого скота или свиней в количестве tOO Кг при посто нном перемешивании ввод т раствор триполифосфата натри , нагретый до , в количестве 50 кг. Полученную смесь подогревают до 65 С, обрабатывают перекисью водорода 33%-ной концентрации в кoJJИчестве 6 кг и выдерживают в течение 30 мин. В результате происходит осветление крови, окончание которог определ ют визуально по ее цвету (желтый цвет или его различные оттенки ) . Дгшее осветленную кровь охлаждают до температуры 37±3 С и подвергают ультрафильтрации на полупроницаемых мембранах с диаметром пор 0,04 мкм при скорости потока крови 0,7 м/с и давлении 0,3 мПа. В процессе ультрафильтрации крови при достижении в ней сухих веществ 18% ввод т фермент каталазу в количестве 3,2 г условных на 1 т осветленной крови и далее кровь продолжают пропускать через полупроницаемые мембраны. Вместе с ультрафильтрацией крови происходит и инактиваци перекиси водорода в крови, окончание которой определ ют по качественной реакции остатков перекиси водорода с насыщенным раствором йодистого кали в присутствии 1%-ного раствора крахмала . Фильтрат после ультрафильтрации вывод т и используют дл приготовлени раствора триполифосфата натри . Сгущенную кровь сушат методом распылени . При этом температура поступающего воздуха составл ет 160 С, а отход щего 60 С. Массова дол выхода сухого продукта из осветленной сгущенной крови составл ет 25%. Врем ультрафильтрации крови с инактивацией и сушкой составл ет 1,2 ч. Полученный продукт сухой обесцвеченной крови (порошок желтоватого цвета) анализируют на содержание в нем азотсодержащих веществ (в пересчете на белок), влаги, золы, железа и определ ют растворимость сухой крови.Сравнительные показатели по получейию сухрй осветленной крови по известному и предлагаемому способам представлены в таблице. Предлагаемый способ позвол ет ускорить процесс производства осветленной сухой крови в 0,6 раза, повысить выход в 2 раза и улучшить качественные показатели целевого продукта по сравнению с известным способом.The invention relates to the technology of obtaining clarified dry blood and can be used in the meat, food, bakery and other industries. The filtrate after ultrafiltration is removed and used to prepare a solution of sodium tripolyphosphate. Condensed blood is spray dried.
