The disadvantages of the known method (prototype) are the low yield of carotenoids and the quality of the resulting concentrate, due to the low degree of extraction of carotenoids from plant materials.

The technical result is achieved by the fact that in the method for obtaining a concentrate of carotenoids from vegetable raw materials, including its drying, grinding, extraction with an organic solvent, filtering the obtained extract and removing the organic solvent from the extract under vacuum, tomato pomace is taken as a vegetable raw material, before drying, the tomato pomace is processed in an electromagnetic field of ultrahigh frequency (EMF microwave) at a heating rate of 0.4-0.6 ° C / s until a temperature of 40-45 ° C is reached, drying is carried out at a temperature of 40-45 ° C in the IR radiation zone to a humidity of 15- 20%, crushed to a particle size of 0.8-1.0 mm, mixed with a solution containing cellulase, xylanase and protease in an amount providing 150, 100 and 50 units, respectively. activity per 1 g of dry matter of dried tomato pomace, at a temperature of 40-45 ° C, pH 5.4-5.6 and constant stirring for 1-1.5 hours at a ratio of dried tomato pomace - a solution containing enzymes equal to ( 1:12)÷(1:15), the precipitate is separated from the resulting fermented mass by filtration under vacuum, heated to a temperature of 83-85°C for 5-7 minutes, dried at a temperature of 40-45°C under vacuum to a moisture content of 8 -10%, cooled to a temperature of 25-30°C, extraction with an organic solvent is carried out in three stages at a ratio of crushed dried tomato pomace - an organic solvent (w/v) equal to (1:10)÷(1:12), and constant stirring for 45-60 minutes at each stage, while acetone is taken as an organic solvent, the filtration of extracts obtained after each stage of extraction is carried out under vacuum and the extracts are combined.
We have experimentally established that the use of specially prepared tomato pomace as a plant raw material, which contains not only carotenes in the composition of carotenoids, but also lycopene, which has a high antioxidant activity (the antioxidant activity of lycopene is 100 times higher than the antioxidant activity of tocopherols (vitamin E), which allows expanding range of application of the obtained carotenoid concentrate in food production.
Processing specially prepared tomato pomace with a solution containing enzymes: cellulase, xylanase and protease, under the optimal conditions established by us, allows us to release carotenoids that are bound to cellulose, hemicelluloses and proteins of the cell wall of tomatoes to the maximum extent, which during subsequent extraction provides a high degree of extraction carotenoids, and, consequently, their high yield.
In addition, it has been experimentally established that filtering the extract under vacuum makes it possible to exclude the occurrence of undesirable processes of oxidation of carotenoids, which are thermolabile substances, and, consequently, to obtain a concentrate of high quality carotenoids.
