Abstract
Description
The present invention relates to medicine and the food industry, namely to the manufacture of a product for the prevention of iron deficiency from the blood of pigs and cattle.
The prior art method for producing sweets with the addition of hemoglobin is known (patent RU No. 2183408, 20.06.2002, A23G 3/00, A23L 1/30), the additive is a powder composition, including blood proteins of farm animals, including hemoglobin - 30 -80% of the total weight of the additive. Moreover, hemoglobin contains iron in an amount of 0.05-0.3% by weight of the hemoglobin contained in the additive.
The effectiveness of the confectionery product with the addition of hemoglobin as an antianemic drug is quite high, however, the disadvantage caused by the glandular taste of candy leads to a decrease in consumer activity in relation to this product.
Closest to the claimed technical solution is a method of complex processing of blood of farm animals to obtain a biologically active substance with anti-anemic properties based on hemoglobin (RF patent 2274003, 02.03.2004, A23J 1/06, A23L 1/30). The raw material for hemoglobin production is stabilized blood, or stabilized uniform blood elements, or unstabilized coagulated whole blood, previously finely ground. The raw material is subjected to three times extraction. The extracted mass is a solution on the surface of which there are red blood cells, red blood cells, stroma, blood plasma proteins, and hemoglobin in the lower part of this mass. The upper ballast substances are removed by merging, and the remaining hemoglobin solution is subjected to membrane macro-, micro- and ultrafiltration. The filtered hemoglobin is freeze-dried.
The disadvantages are that the use of extraction leads to large losses of red blood cells and hemoglobin; the resulting hemoglobin contains an admixture of sodium chloride, which negatively affects the quality of the final product.
The task set by this invention is to obtain a product that does not contain harmful impurities, namely sodium chloride, and reduce the loss of red blood cells.
This problem is solved due to the fact that erythrocyte mass from stabilized blood is used as a raw material, drying by sublimation of a hemoglobin-containing raw material. In this case, before isolating the erythrocyte mass from whole blood, a preservative stabilizer consisting of a mixture of solutions of 4% sodium citrate and a 0.07% citric acid solution can be used. The allocation of red blood cells can be carried out by separation with a separation factor equal to 2000 units. After isolation of the erythrocyte mass, hydrolysis at a temperature of 35 ° C can be applied, the duration of the process is 12 hours, the ratio of erythrocyte mass: acid is 10: 1, and one of three acid variants can be used: 5% acetic acid, 10% citric acid, 10% acetic acid.
The technical result provided by the given set of features is a dry hydrolyzed iron-containing mass obtained from the blood of pigs and cattle, the stages of preparation of which include stabilization of the blood when it is collected from the animal and cooling after stabilization, separation into plasma and red blood cells, collection of the obtained erythrocyte mass, red blood cell hydrolysis, freeze-drying.
The invention consists in the following.
At the first stage, blood collection is carried out without contact with the atmosphere in order to avoid activation of the enzymatic process of blood coagulation. This is accomplished using hollow knives that communicate with the pumping system. The pumped blood enters the reservoir for stabilization. There it is mixed with special blades with a “stabilizer-preservative”, which is a mixture of solutions of 4% sodium citrate and 0.07% citric acid solution, the mass fraction of citric acid solution of the total mass of preservative stabilizer is 0.035%. After stabilization, the blood is cooled to a temperature of 18 ° C.
At the second stage, blood is separated under the following conditions: separation factor Fr = 2000, the duration of the process is 6 minutes for pig blood and 5.5 minutes for cattle blood. The rotational speed of the separator drum will depend on its inner radius. The allocated erythrocyte mass is collected in a tank, which must be pre-treated with special disinfectants that are acceptable in the food industry. The collected erythrocyte mass is sent to the workshop where hydrolysis is carried out.
In the third stage, hydrolysis is carried out in three options, the choice of which depends on the requirements for quality indicators of the finished product. According to the first option, the hydrolysis process is carried out with 5% acetic acid, the ratio of erythrocyte mass: acid is 10: 1, the process temperature is t = 35 ° C, the duration is 12 hours. In the second embodiment, hydrolysis is carried out with 10% citric acid, the ratio of erythrocyte mass: acid is 10: 1, at a temperature of t = 35 ° C and for 12 hours. The third variant of hydrolysis is carried out with 10% acetic acid, the ratio of erythrocyte mass: acid is 10: 1, the process temperature is t = 35 ° C, and the duration is 12 hours.
Продолжительность процесса τ=2±0,1 ч и температура в камере t=25±1°C.In the fourth stage, the process of freeze-drying is carried out. Drying is carried out on a freeze-drying apparatus, which allows reducing the pressure in the drying chamber to P = 400 ± 50 Pa. This allows the drying process to be carried out when moisture from the product is released from the solid phase (ice) to the gaseous (steam) bypassing the liquid. The duration of the process is τ = 2 ± 0.1 h and the temperature in the chamber t = 25 ± 1 ° C.
75%.The final stage of packaging of the finished product is carried out in a separate workshop, where the sterility of the process is observed. Dry product packaging is carried out in plastic bags on the packaging unit. Next, the packaged product arrives at the storage warehouse, in which the following storage parameters are supported: t = 4 ± 1 ° C and relative air humidity of not more than 75%.
Thus, the proposed method allows to obtain a harmless product with high biological value. The proposed products can be used as food additives, drugs for the prevention of iron deficiency, a concentrated natural source of biologically available iron in food production.
