Из уровня техники известен способ получения соленой зернистой икры из свежих и мороженных ястыков, включающий сортировку, мойку, обработку ястыков раствором ферментного препарата, отделение икры, ее посол, внесение масла и антисептиков, причем ястыки перед обработкой ферментным препаратом выдерживают в насыщенном растворе тузлука, содержащем хлористый кальций в количестве 0,03-0,1 моль/л в течение 1-3 мин при 8-14°С при соотношении тузлук:ястык 1:1 для растворения ястычной пленки, обработку ястыков осуществляют ферментным препаратом, полученным из внутренностей ракообразных или кальмара в концентрации 3-10% к массе ястыков при 12-18°С в течение 10-30 мин. Если это будут мороженые ястыки, то температура и время выдержки будет максимальная, а если будут свежие ястыки - минимальна. На следующем этапе происходит обработка холодным раствором хлорида натрия, насыщенного озоном, который позволяет получить икру, освобожденную от различного рода болезнетворных бактерий.
