Abstract

FIELD: alcoholic beverage industry, particularly, production of special vodka "MODERN". SUBSTANCE: method involves preparation of aqueous-alcoholic solution in terms of 40-% strength of vodka. Prepared solution is thoroughly mixed, and passed through carbon-cleaning battery with filtration speed up to 40 dal/h for fresh carbon, and up to 30 dal/h, for regenerated carbon. Then solution is directed to finishing tank. Preliminarily dissolved in ethyl rectified alcohol in ratio 1:100 cinnamon oil is introduced in the finishing tank simultaneously with aqueous-alcoholic infusion of lime-tree blossom prepared by single-stage infusing of lime with aqueous-alcoholic liquid, and with the following filtration of infusion. The ingredients introduced in finishing tank are mixed, corrected, if necessary, and directed to bottling with obligatory filtration. Prepared special vodka has the following ratio of ingredients, l/1000 dal: lime-tree blossom aqueous-alcoholic infusion of Ist discharging, 3-3.5; alcoholic solution (1:100) of essential cinnamon oil, 0.1-0.3; 65.8-% sugar syrup, 20-25; aqueous-alcoholic liquid, the balance. Это достигается тем, что по способу производства водки особой, предусматривающему приготовление сортировки (водно-спиртовой жидкости) из спирта этилового ректификованного и воды питьевой исправленной, очистку ее активированным углем, введение в доводной чан в водку 65,8%-ного сахарного сиропа и водно-спиртового настоя липового цвета 1 слива, предварительно отфильтрованного, согласно изобретению в доводной чан одновременно с отфильтрованным водно-спиртовым настоем липового цвета 1 слива дополнительно вводят эфирное коричное масло, предварительно растворенное в спирте этиловом ректификованном в соотношении 1: 100 с последующим перемешиванием, фильтрацией и розливом, при этом для производства водки используют входящие в нее компоненты при следующем соотношении, л на 1000 дал готового продукта:
водно-спиртовой настой 1 слива липового цвета - 3-3,5
спиртовой раствор (1:100) эфирного коричного масла - 0,1-0,3
сахарный сироп 65,8%-ный - 20-25
водно-спиртовая жидкость - остальное

- спирт этиловый ректификованный "Экстра" по ГОСТ 5962-67;
- воду питьевую по ГОСТ 2874-82 с жесткостью до 1 моль/м³ для естественной воды и до 0,2 моль/м³ для исправленной воды;
- коричное эфирное масло, разрешенное к применению органами Госсанэпиднадзора Минздрава России;
- липу (цвет) по ГОСТ 6518-69;
- сахар-песок рафинированный по ГОСТ 22-94;
