Description

 The invention relates to distillery production, in particular to special vodkas.

 The use of plant materials in the distillery is widely known.

 For example, the bitter tincture of Arstan balm [1] contains a large set of components of plant materials, one of which is oregano.

 The use of herbs in tincture, such as oregano, mint, thyme, enriches it with essential oils, gives the product a spicy aroma.

 It is also known the use of water-alcohol infusion of tarragon grass for the production of bitter infusions [2, 3].

 The high organoleptic properties of tinctures are achieved by enriching the blend with aromatic and tannins that are characteristic of tarragon grass.

 However, the above examples apply only to bitter tinctures with the use of water-alcohol infusions of herbs.

 The closest in technical essence and the achieved result to the proposed invention is special vodka “Biysk piquant” [4], containing 65.8% sugar syrup, aromatic alcohols of vegetable raw materials and water-alcohol liquid. As aromatic alcohols, it contains aromatic alcohol of coriander, which has a spicy aroma, and aromatic alcohol of a mixture of spruce needles and aerial parts of Rhodiola rosea, which has a complex of biologically active properties.

 However, the combination of the above aromatic alcohols gives vodka an aroma inherent only to this plant material used to make this vodka.

 The aim of the present invention is to expand the range of special vodkas.

 This goal is achieved by the fact that special vodka containing 65.8% syrup, aromatic alcohols of plant materials and water-alcohol liquid, as aromatic alcohols, according to the invention contains aromatic alcohol infusion "Tarragon" and aromatic alcohol of oregano.

A distinctive feature of the proposed new vodka composition is that it contains aromatic alcohols “Tarhunny” infusion and aromatic alcohol of oregano in the following ratio of ingredients, l per 1000 gave the finished product:

Aromatic alcohol infusion "Tarragon" - 3.8-4.2
Aromatic alcohol of oregano - 2.8-3.2

High organoleptic properties of vodka are achieved by enriching the blend with aromatic substances characteristic of tarragon grass, oregano.

 Introduction to the composition of the composition of vodka aromatic alcohol of oregano enriches it with essential oils, increases biological activity, gives the product a spicy peculiar flavor.

 Special vodka "Ephemeris" is prepared as follows.

For the preparation of special vodka, ethyl rectified ethyl alcohol of the highest purification is used drinking water with a hardness of up to 1 mol / m ³ for natural un softened water and up to 0.2 mol / m ³ for corrected water.

 A water-alcohol solution is prepared in such a way as to obtain vodka with a strength of 40%.

 The aromatic alcohol of the Tarkhunny infusion is prepared from the Tarkhunny alcohol infusion by distillation in a special vacuum system Alambik.

 Aromatic alcohol of oregano is prepared by pouring oregano grass with a water-alcohol mixture in a distillation cube, then distilled in a special vacuum system "Alambik" and get aromatic alcohol.

 The strength of aromatic alcohol is 75%.

 Alcohol and water are mixed based on the production of water-alcohol liquid with a strength of 40%. The resulting water-alcohol liquid is thoroughly mixed and passed through a coal-cleaning battery, which includes two sand filters (with quartz sand), a charcoal column with activated charcoal BAU-A.

 The aromatic alcohol of the Tarkhunny infusion and the aromatic alcohol of oregano are added to the liqueur vat, sugar syrup and the prepared hydroalcoholic liquid are also added thereto, mixed and served for bottling with control filtration.

 Example 1

 Aromatic alcohol of the Tarkhunny infusion at the rate of 3.6 liters of the finished product and aromatic alcohol of oregano at the rate of 2.5 liters, as well as sugar syrup at the rate of 11.1 (per 1000 decaliters of the finished product) are added to the finishing vat with stirring.

 The resulting vodka is a clear liquid with a weak taste range.

 Examples 2-5. Special vodka is prepared analogously to example 1, only the ingredients are used in the amounts shown in the table.

 Analyzing the quality of vodka compositions according to the table, we can conclude that an increase in the components gives the vodka a burning taste, a sharp aroma with a predominance of tarragon and oregano, and a decrease in the components leads to an elusive aroma of oregano and tarragon.

 The compositions of example 2-4 are selected optimal.

 Physico-chemical characteristics of vodka "Ephemeris" correspond to vodkas prepared with high-purity alcohol.

 Color is colorless.

 The taste is soft, inherent in vodka.

 Aroma - vodka with a light aroma of tarragon and oregano.

 Thus, a successful combination of aromatic tarragon alcohol and aromatic oregano alcohol gives vodka harmony, softness in taste and light aroma of tarragon and oregano.

 Special vodka "Ephemeris" refers to high-quality alcoholic beverages, has good organoleptic properties, is stable during storage, is approved and recommended for release.

 The indicated optimal composition of the ingredients for producing special vodka “Ephemeris” was tested under production conditions at ZAO Sormovsky EVZ, and positive results were obtained. Based on the results of testing, the Ephemeris vodka with the proposed composition of ingredients was recognized by the Central Tasting Commission of the alcohol and alcoholic beverage industry of the Russian Federation, which meets the established regulatory requirements and current standards for such products.

Special vodka, containing 65.8% sugar syrup, aromatic alcohols of plant materials and water-alcohol liquid, characterized in that as aromatic alcohols of plant materials it contains aromatic alcohol of the Tarkhunny infusion and aromatic alcohol of oregano in the following ratio of ingredients, l per 1000 gave the finished product:
