Abstract
Description
The invention relates to biotechnology, in particular to methods for producing food-grade vitamin Ammivit concentrate from spent brewer's yeast and baked pressed yeast.
A known method of producing food vitamin concentrate, providing for the autolysis of concentrated viable cells of sedimentary yeast, separation of the liquid phase of the autolysate, followed by its concentration in vacuo.
The disadvantage of this method is that it does not fully preserve the nutrients contained in the cells of the feedstock, and the production process is long.
The technical result is to reduce the production time of food vitamin concentrate, reduce its cost and increase nutritional value.
To this end, in a method for producing a food-grade vitamin concentrate, comprising autolysis of concentrated viable cells of sedimentary yeast, separation of the autolysate liquid phase followed by its concentration in vacuo, the initial sedimentary yeast is pre-suspended in drinking water, and the suspension obtained is passed through a pipe-in-tube heat exchanger having casing temperature 45-48 ° C, and lead autolysis at the same temperature no more than 36 hours, after which the autolysate before separation of the liquid phase is heated to 90 ° C, and the obtained concentrate is added with B vitamins, in addition, when using bread pressed yeast as a raw material, their biological enrichment with thiamine is carried out previously.
The invention consists in that to accelerate the autolysis the yeast suspended in the water passed through the heat exchanger tube in tube type, having a temperature of 45-48 in the casing C, which allows yeast to rapidly heat a thin layer of process and eliminates samobrozheniya characteristic for brewer's spent yeast. The autolysis process is carried out for no more than 36 hours at the same temperature. The autolysate is heated before separation from the sediment to 90 ° C, which provides a more complete extraction of substances from the cells and the simultaneous pasteurization of the autolysate. After vacuuming, the missing B vitamins are added to the concentrate: B 12 , B 15 and orotic acid. When using baker's yeast as a raw material, their biological enrichment with thiamine is carried out previously.
П р и м е р 1. PRI me R 1. Waste brewer's yeast (with a ratio between dry substance and water 1:10) is passed through a thin stainless steel pipe with a diameter of 5.6 cm, a length of about 2 m. The pipe is placed in a heat chamber or in a casing with water having a temperature of 45-48 ° C. Then the yeast autolysis liquefied through the top, is poured into a container placed in a heat chamber where the yeast are not more than 36 hours, wherein the vessel is tightly closed lid. Upon completion of cell autolysis defined microscopy, with the precipitate obtained autolysate passed through pasteurization, cooling unit (inlet temperature 90 C, outlet 15 ° C). Then the autolysate was separated, the transparent part of the product is fed into a vacuum apparatus and concentrated at 45-50 ° C to a moisture content of 50-55% resulting batch of concentrate is supplied in a container with a stirrer and a jacket (water jacket temperature 60 ° C). With stirring, concentrated solutions with a certain content of three vitamins: B 12 , B 15 and orotic acid are added to this container. After thorough mixing, the resulting "Ammivit" enters the dryer to obtain a dry product. Dry product is packaged in plastic bags.
П р и м е р 2. 1. PRI me R 2. Baking yeast in a concentration of 1:25, counting on dry, after their biological enrichment with thiamine is passed through a thin stainless steel pipe with a diameter of 5.6 cm, a length of 2 m. The pipe is placed in a heat chamber, where the yeast are no more than 36 hours, while the container is tightly closed by a lid. Further, the process occurs similarly to the process of example 1.
Thus, the proposed method, in comparison with the known, can significantly reduce the time of manufacture of the product, reduce its cost and increase nutritional value.
