Abstract
1. Способ получения бактериального концентрата, предусматривающий приготовление питательной среды на основе творожной сыворотки, внесение симбиотической закваски, полученной методом культивирования кефирной грибковой закваски и термофильных лактобактерий Lactobacillus bulgaricus и Lactobacillus acidophilus при температуре (30±2)°С, накопление биомассы, раскисление питательной среды, отделение полученной биомассы и розлив, отличающийся тем, что в питательную среду вносят ржаную муку в количестве 2±0,5% от объема питательной среды, в симбиотическую закваску дополнительно вводят Lactobacillus helveticus, при этом соотношение кефирной грибковой закваски, Lactobacillus bulgaricus, Lactobacillus acidophilus и Lactobacillus helveticus составляет 1:0,5:0,5:1 соответственно, культивирование симбиотической закваски ведут в течение 8-10 ч.2. Способ по п.1, отличающийся тем, что для получения замороженного бактериального концентрата, полученную биомассу смешивают с защитной средой и замораживают.3. Применение жидкого бактериального концентрата, полученного способом по п.1 в качестве биологически активной добавки к пище.4. Применение замороженного бактериального концентрата, полученного способом по пп.1 и 2 в качестве закваски прямого внесения.1.
