Способ производства молочного сахара из молочной сыворотки, включающий очистку сыворотки от жира и белков и сгущение, с последующей кристаллизацией лактозы, отделением и сушкой кристаллов лактозы, отличающийся тем, что процесс кристаллизации лактозы из сгущенной до 45-60% сухих веществ сыворотки осуществляется путем циклической температурной обработки, состоящей в последовательном ее нагревании и охлаждении.
