Abstract
1. Композиция микрокапсулированных пищевых ингредиентов для жирсодержащих продуктов, включающая экстракты из пряно-ароматических или дикорастущих семян и трав в виде микрокапсул, отличающаяся тем, что она содержит натуральные вкусо- и ароматобразующие вещества и полифенольные антиоксиданты в виде микрокапсул; для колорированных жирсодержащих продуктов дополнительно содержит пищевые добавки натуральных красящих пигментов в виде микрокапсул, а оболочка микрокапсул выполнена из пищевых восков и жиров или смеси из них, при следующем соотношении компонентов, мас.%:2. Композиция по 1, отличающаяся тем, что в качестве экстрактов пряно-ароматических или дикорастущих семян и трав используют эфирные и жирные масла и олеорезины пряно-ароматических или дикорастущих растений.3. Композиция по п.1, отличающаяся тем, в качестве полифенольных антиоксидантов используют дигидрокверцетин, кверцетин или спирофен.4. Композиция по п.1, отличающаяся тем, что в качестве пищевых восков и жиров используют моно", ди- и триглицериды, стеариновую кислоту, полиэтиленгликоль, пчелиный, карнаубский, канделильский и микрокристаллический воски.5. Композиция по п.1, отличающаяся тем, что для колорированных жирсодержащих продуктов она дополнительно содержит пищевые добавки натуральных красящих пигментов в виде микрокапсул.6. Композиция по п.1, отличающаяся тем, что в качестве натуральных красящих пигментов используют водные и/или водно-спиртовые вытяжки натуральных красящих пигментов из растительного сырья, например выжимок винограда, корня куркумы, корнеплодов свеклы, кошенили, красной моркови.1.
