Abstract

Inventia se refera la cicoare fara gust amar, utilizabila în industria alimentara si la un procedeu de obtinere a acestui produs. Cicoarea, conform inventiei, contine substante extractive neazotate, dintre care inulina în cantitatea cea mai mare, celuloza, grasimi, proteine brute si substante minerale, prezinta un coeficient de solubilitate de 79,8%, culoare maroniu-roscat si gust usor amarui. Procedeul de obtinere a produsului prevede supunerea rondelelor de radacina de cicoare, înainte de uscare, unui proces de difuzie în apa rece, pîna cînd extractia de substanta solubila este zero.
