Abstract

1445544 Soluble protein from vegetable matter NESTLE SA 17 April 1974 [17 April 1973] 16729/74 Heading C3H A soluble protein fraction is obtained from a protein containing vegetable material by extracting the vegetable material at a pH of less than 4 with an aqueous medium, treating the aqueous extract obtained by gel filtration at said pH and eluting a first fraction containing a soluble protein at said pH. The vegetable material may be legumes and oleaginous plants, including whole or defatted soya beans, chick peas, white beans, sesame seeds and cotton seeds. The preferred extracting agent is phosphoric acid and extraction may be carried out at ambient temperature with vigorous stirring at a pH of 1À5-3. The extract is centrifuged and, optionally, the liquid or milk obtained sterilized, prior to gel filtration on "Sephadex G25" (Sephadex is a Registered Trade Mark) at a preferred pH of 1À5-3. The eluate may be used as produced for acidic beverages or the pH adjusted to at least 6À25, insoluble material removed, and the liquid used in neutral beverages. The protein obtained by the elution step has a bland odour and taste and precipitates reversibly at its isoelectric point, being soluble below this point, and at least partially soluble above it.
