Abstract
Przedmiotem zgłoszenia jest nowe i oryginalne zastosowanie tłuszczu kokosowego jako zamiennika tłuszczu zwierzęcego w produkcji kiełbasy homogenizowanej z mięsa drobiowego, wpływającego istotnie na uzyskanie dłuższego terminu przydatności do spożycia kiełbasy homogenizowanej z mięsa drobiowego (według badań właścicielskich o co najmniej 93 dni), wobec standardowej produkcji z udziałem tłuszczu zwierzęcego, przy jednoczesnym utrzymaniu tekstury, walorów smakowych i jakości ocenianej w kategoriach mikrobiologicznej, organoleptyczno - sensorycznej i chemicznej, w całym okresie przydatności do spożycia, właściwych dla wyrobów mięsnych ze standardowo wykorzystywanym tłuszczem zwierzęcym do stosowania w przemyśle spożywczym.
