Abstract

Wynalazek dotyczy sposobu wytwarzania fermentowanych, prozdrowotnych napojów owocowych jako zamienników mlek fermentowanych - zwłaszcza dla osób pozostających na odpowiednich dietach eliminacyjnych, a szczególnie wymagających eliminacji białek zwierzęcych i/lub laktozy. Istota sposobu według wynalazku polega na tym, że preparat owocowy o zawartości 25-98% wagowych przecieru owocowego zawierający 8-12% wagowych ekstraktu 1-6% wagowych disacharydu nie laktozy, 0,0-0,3% wagowego dwuwodnego cytrynianu sodu, o pH nie mniejszym niż 5,0, inokuluje się monokulturą startową Lactobacillus plantarum szczepów: KKP384 lub JCM8348, lub szczepu Lactobacillus paracasei ssp. paracasei JCM2769, w ilości 0,001-0,01% wagowego skoncentrowanej liofilizowanej kultury prowadząc fermentację do pH nie wyższego niż 4,6, po czym do produktu fermentacji wprowadza się ewentualnie suplement w postaci skoncentrowanej liofilizowanej kultury z rodzaju Bifidobacterium, korzystnie Bifidobacterium breve ATCC 15700 lub Bifidobacterium infantis ATCC 15697, w ilości 0,01-0,1% wagowego.
