Abstract

The present utility model relates to a process for making potato ice cream with buko-pandan flavor which comprises of the following steps: a. paring the potatoes; b. boiling the potatoes until cooked; c. cooling the cooked potatoes; d. mixing all the cut cooked potatoes, sugar, cream, condensed milk, salt and eggs in the blender; e. blending all the mixed ingredients; f. adding the buko-pandan to the blended ingredients; g. blending all again the ingredients; h. pouring of the blended ingredients in the container; i. pasteurizing the blended ingredients; j .cooling the blended ingredients; k. beating the cooled pasteurized mixture at very high speed until soft, smooth, and creamy; I. pouring the heated ice cream in containers; and m.freezing the poured ice cream for 5 hours or until texture is firm.
