本発明は、スフレ菓子の製造方法に関し、詳細にはスフレとソースが2層からなる菓子で、冷蔵状態で風味・食感の良好な冷たいスフレ菓子を提供することが出来ると共に、電子レンジ加熱することにより短時間で風味・食感の良好なホットスフレ菓子を提供することが出来るスフレ菓子の製造方法に関する。

【従来の技術】
スフレは、従来温菓の一種であり膨らました軟らかいものである。簡単にいうと、牛乳、バター、砂糖、卵黄、粉などでクリーム状にしこれを煮上げたものに、卵白の泡立てたものを混ぜて焼いてつくられる。
従来スフレ菓子はスフレ地単独で食するか、別途ソースを上からかけて食するかであった。スフレ地とソースを同時に提供するものではなかった。
温菓は工場でつくるというよりも、むしろ料理場でつくられるもので、非常に小回りの手間のいるものである。これに対して特開平8ー298933号公報に、ホットスフレおよびその製造法が提案されている。内容としては、ホットスフレを安定的に大量生産、短時間焼成できる方法を提供することを目的とし、つくりだめして天候等に応じて生産調整することのできる方法を提供するものである。これは、スフレ地のみからなる菓子の提供であり、冷蔵状態での提供についても言及されていない。

【発明が解決しようとする課題】
本発明の目的は、スフレ地とソースが綺麗な2層からなるスフレ菓子を提供することにある。又冷蔵状態でも、ホットな状態でも風味・食感の良好なスフレ菓子を提供し、消費者の味覚の多様化に答えようとするものである。

【課題を解決するための手段】
上記の課題を解決するために種々の検討を行った結果、室温で液状又は流動状のソースを容器内で冷却固化し、その上にスフレ生地を充填して焼成することにより課題を解決できる知見を得て本発明を完成するに到った。

【発明の実施の形態】
本発明の室温(15℃〜25℃)で液状又は流動状のソースを製造するには、公知の方法を利用することが出来る。チーズ系ソースは、チーズ類としては、パルメザン、エダム、モッツアレラ、クリームチーズ等のナチュラルチーズ、フィルドチーズ、植物性チーズが例示できる。これらチーズ類に、生クリーム、植物性クリーム、牛乳、水を使用して液状又は流動状のソースを得ることができる。チーズ類としては、特にマスカルポーネ、クリームチーズを利用するのが好ましい。カスタード系ソースは、卵、砂糖、牛乳で得ることができる。その他の原料として、小麦粉、マーガリン、バター、生クリーム、植物性クリーム等が使用できる。又、味の多様化に答えて、チーズ類の一部をチョコレート類、果肉、果汁等の果物類、野菜のピューレ等に替えて利用することもできる。チョコレート類としては、ホワイトチョコレート、スイートチョコレート、ココアパウダー、ミルクチョコレートを利用するのが好ましい。
本発明における容器は、耐熱性容器が望ましい。耐熱容器は、素材としては耐熱性プラスチック、陶磁器、耐熱ガラス、金属、セラミック等が利用できる。耐熱性プラスチックとしては、PP(ポリプロピレン)が例示できる。

ソースを冷却固化する方法としては、冷凍・凍結するのが好ましい。ソースを冷却固化しないで、スフレ生地を充填し焼成した場合、焼成したスフレ菓子の上部にひび割れが生じ商品価値のないものが得られる。冷凍・凍結する方法としては、バッチ式凍結が主流であるが連続式の急速凍結も含まれる。凍結装置としては、家庭用冷蔵庫はもちろんのこと、エアブラスト凍結装置、コンタクト凍結装置、ショック凍結装置等が用いられる。

本発明におけるスフレ生地の製造は、予め卵白と砂糖を泡立ててメレンゲを調製しておき、これと他の原材料とを混合する別立て法や、メレンゲを調製することなく卵白を全ての原材料と一度に混合するオールインミックス法の何れも採用することができる。しかし、オールインミックス法は別立て法で製造するよりも品質的に劣るため、別立て法がより好ましい。 卵白と砂糖を必須原料として、それ以外の原料として牛乳、チーズ類、卵、マーガリン、バター、小麦粉を利用することができる。チーズ類としては、ナチュラルチーズ及び植物性チーズを含む各種チーズ類、特に本出願人が先に出願した、植物由来の水溶性ヘミセルロースとモノグリセリドまたは有機酸モノグリセリドを含むチーズ類(特開平7ー298834号)、およびクリームミックスを乳酸発酵し加熱殺菌した後、実質的にホエーを排除することなく製造したクリームチーズ様食品(特開平8ー9882号)が利用できる。
チーズ類に替えて、生クリーム、植物性クリームを含む各種クリーム類、チョコレート類、果実のピューレ類、魚のすり身、野菜、ハム等が利用できる。なお、本発明におけるスフレ生地は以上の例示に限定されるものではない。

室温で液状又は流動状のソースを冷却固化し、冷凍状態にされたソースの上にスフレ生地を充填し焼成する。焼成を行う機器としては、製菓・製パン用のオーブンが好ましいが、その他に蒸し器、電子レンジ等の加熱機器も適宜使用できる。焼成条件としては、オーブンの種類により一該に規定できないが、概ね、オーブン温度130〜250℃、好ましくは150〜200℃で5〜60分、直焼きまたは湯煎にて焼成する。又、焼成する場合、7割程度の加熱で止め冷凍流通させ、電子レンジで再加熱するとホットな状態の手作りのスフレ菓子と遜色のないものが得られる。

【実施例】
以下に、実施例及び比較例をあげ本発明の効果をより一層明確にするがこれらは例示であって本発明の技術思想がこれらの例示によって、限定されるものではない。なお、以下に例示の部は何れも重量基準を意味する。
評価は、パネラー10名により風味、食感、外観の3項目を4段階で評価し平均で判定した。

実施例1
以下に示すソース配合、スフレ生地配合、工程によりスフレ菓子を製造した。

工程としては、先ずソースの調製を行った。ホワイトチョコレートを50℃に加温したコンパウンドクリームで溶かし牛乳を加えた流動状の液に、マスカルポーネを加えてソースを調製した。このソースを、側面にショートニングを塗ったマーブルカップ*(90ml容)に、25g 充填しー20℃で2日間凍結保存後、冷凍状態のソースの上にスフレ生地を40g加えた。スフレ生地は、卵黄と砂糖、薄力粉をボールにとりホイッパーを用いてすり合わせ、クリーム状のバッターを調製した。次に、鍋に牛乳を入れ、軽く一度沸騰させた後、直ちに上記のバッターを加え、さらにチーズを加えて、素早くホイッパーで混合し、さらに溶かしたバターを加えてカスタードクリーム状にした。一方、砂糖と卵白をボールに入れ、ホイッパーで最終比重0.22(g/cm3)までホイップし、最後にレモン果汁を加えてメレンゲを作成し、上記のカスタークリーム状物に加え均一にすることにより調製した。

次にスフレの焼成を行った。焼成条件としては、電気オーブンを用いて、上火180℃
下火160℃ 焼成時間35分 湯煎にて焼成を行った。
焼成終了後、室温放置しその後冷蔵冷却を行った。冷蔵2日間保存後、冷蔵状態のスフレ菓子を取り出し冷蔵状態と電子レンジで20〜30秒加熱しホットな状態の2つの状態において評価した。特に電子レンジ加熱したスフレ菓子は、膨脹してマーブルカップを越えてふっくらとし美しい外観を呈した。

ソース配合、スフレ生地配合は実施例1と同様に行った。工程については、実施例1ではソースを調製後、マーブルカップに25g充填し凍結保存したのに対して、冷蔵1日保存後固化していないソースの上にスフレ生地を40g加え、実施例1と同様な焼成条件で湯煎にて焼成した。
評価としては、焼成したスフレ菓子の上部にひび割れが生じ商品価値のないものとなった。

本発明により従来スフレ菓子はスフレ地単独で食するか、別途ソースを上からかけて食するかであったものを、スフレ地とソースを同時に、冷蔵状態でも、ホットな状態でも容器に入った状態で提供できるようになった。そしてスフレ地とソースが綺麗な2層からなり、焼成したスフレ菓子の上部にひび割れのない商品価値の高いものが提供できるようになった。[0001]

In order to produce a liquid or fluid source at room temperature (15 ° C. to 25 ° C.) according to the present invention, a known method can be used.
