Abstract
Sea grapes (lato) was used to fortify pasta noodles. This utility model provides an alternative method of preparing the sea grapes and adding it to the pasta noodles. Three formulations, with varying proportions of powdered sea grapes, were prepared and subjected to sensory evaluation. PL 1, the formulation with the best overall acceptability ratings, was tested for nutrient content. Nutritional analysis of PL 1 showed that all the Vitamin A and Beta-carotene from the pasta are both from the powdered sea grapes.
