Description

Fremgangsmåte for fremstilling av L-arginin-L-glutamat.
Foreliggende oppfinnelse angår en
fremgangsmåte for fremstilling av et nytt
og nyttig salt, L-arginin-L-glutamat. Dette
salt kan særlig brukes for natrium-fri be-handling av næringsmidler, særlig kjøtt.
I henhold til oppfinnelsen kan saltet
fremstilles ved å blande L-arginin med L-glutaminsyre i vann og krystallisere det
resulterende salt fra vannet ved til vannet
å sette et polert organisk oppløsningsmid-del som lar seg blande med vann.
Eksempelvis ble 17,2 g L-arginin og
14,5 g L-glutaminsyre oppløst i 155 g vann.
Derved fremkom en klar homogen oppløs-ning med en pH-verdi på 5,3. Denne opp-løsning ble filtrert og filtratet inndampet ved 50° C ved nedsatt trykk til en oppløs-ning med et innhold av fast stoff på ca.
45 pst. Absolutt alkohol (220 g) ble satt
til den konsentrerte saltoppløsning, og
denne blanding ble avkjølt til 5° C i en
time. Det resulterende faste salt ble fjer-net fra blandingen ved filtrering og vasket
med abs. metanol. Etter innledende tørking
i luften, ble saltet tørket videre i en va-kuumovn ved 60° C i 3 timer. Det resulterende salt, L-arginin-L-glutamat veide 30
g, dvs. 94,6 pst. av det teoretisk mulige ut-
bytte, basert på mengden av L-arginin og L-glutaminsyre som ble brukt, og smeltet ved 193—194,5° C under spalting.
Det infrarøde spektrum for L-arginin-L-glutamat ble studert i sammenligning med spektrene for L-arginin, L-glutaminsyre, en blanding 1 : 1 av L-arginin og L-glutaminsyre og natrium-L-glutamat. Spektret for L-arginin-L-glutamat-salt av-vek atskillig fra spektrene for L-arginin, L-glutaminsyre og blandingen av de to. Den mest betydningsfulle forskjell var til-stedeværelsen av et sterkt bånd ved 6,3 mikron for saltet, mens de fri forbindelser og blandingen ikke hadde dette bånd. I spektret for saltet, natrium-L-glutamat, var det et lignende bånd ved 6,4 mikron.

Claims (1)

  1. Fremgangsmåte for fremstilling av L-arginin-L-glutamat, karakterisert ved at L-arginin og L-glutaminsyre blir oppløst i vann, og det resulterende salt krystallisert og skilt fra vannet.
