Abstract

Uncooked mushrooms are sliced by a number of spaced knives which move virtually in the direction of the cut. The mushrooms may be laid on a number of parallel knives and pushed past them by a plate having grooves into which the knives fit. Alternatively the mushrooms may be conveyed on a number of strings and sliced by wires moving at an angle to the strings and at about the same speed. The mushrooms are not crushed or damaged as they would be for example by rotating knives.
